Energizing smoothie

Today was one of those mornings where Big H was really trying my patience. We sailed right through the twos but age three is proving to be quite the challenge! Since a glass of wine didn’t seem like an acceptable lunch choice I decided to make myself a nutrient packed smoothie. I often rely on these for quick breakfasts or lunches on the run and they always leave me feeling full and satisfied. Eating healthy also seems to improve my mood…something I definitely needed today!!

Into the blender went:

One large handful of spinach
3-4 frozen strawberries
One small handful of frozen blueberries
Two frozen mango chunks
1/2 tsp ground flaxseed
1/2 scoop vanilla protein powder
One large spoonful of Greek yogurt
Splash of almond milk
1 tsp honey
(I realized as I was typing up this list that I forgot my banana. Normally I would add a half of a frozen one)

Just blend and enjoy! The ingredients are extremely flexible so you can sub in whatever fruit, etc that you enjoy. I definitely find that frozen works best. Don’t be scared of the spinach if you aren’t a fan. Even my spinach-loathing husband says that he can’t taste it. :)

Funfetti dip!!

I’ve seen this recipe on Pinterest a number of times and knew that Big H would love it! I try to make most of his snacks as healthy as possible but this is certainly an exception. At least it has yogurt in it haha. The original recipe called for an entire box of cake mix so I scaled it way back so we would just have a few servings. As soon as I got the box of cake mix out of the cupboard Big H started singing ‘Happy Birthday’ because he thought we were going to make cupcakes. Thankfully he wasn’t disappointed with the alternative 😃.

Ingredients

6 Tblsp. Funfetti cake mix
4 Tblsp. Plain yogurt
2 Tblsp. Cool Whip
Animal crackers or pretzels

Place first three ingredients in a small bowl and mix. Big H loves to stir everything and anything these days so he was more than willing to help.

Dip animal crackers or pretzels in dip and enjoy!! With a three year old it didn’t take long for this to turn into a messy game of farm animals!

Baked Egg in Avocado

Avocado makes everything better. It’s a staple for me I love finding new and easy ways to incorporate them! Speaking of easy, it doesn’t get much easier than these 4 steps.

1. Cut avocado in half
2. Remove pit and use spoon to scoot out a bit to make more room for egg
3. Crack eggs in bowl and place yolk and some of the egg whites into the avocado
4. If necessary, use aluminum foil to support avocado. (Mine were a little wobbly and the egg can easily spill out)

Bake at 425 for 12-14 minutes but keep an eye on them, remove when the egg looks done.

Finish with salt and pepper to taste.

Shaped Foods

Squares are boring, but flowers are fun! The quest continues for creative ways to get Reagan to eat something other than snacks. Breakfast, lunch and dinner, no matter how important, are just not on Reagan’s to-do-list. We’ve found, at times, making meal time fun- engages her in eating just a little bit more.
If Reagan had the choice of what to have for lunch, she’d choose an orange popsicle and a cheese stick. She would then prefer to eat while playing in the sandbox. I’m totally for popsicles, cheese sticks and playing in sandboxes, but not at the same time.

I’d like to sit at the table and attempt to eat somewhat of a nutritious meal…such a horrible mom, in Reagan’s eyes, I know… But manners are important and instilling them at an early age is important too.

So yesterday to get Reagan to eat most of a grilled cheese (that I hid her probiotic and DHA in) I gave her choices. Not choices of what to eat, although that does happen often, but the choice of the shape that she would eat.

Banana Bread Smoothie

After I finished my run and strength training workout this morning the kids were still asleep (this never happens!) so I decided to whip up a delicious breakfast smoothie with my few extra minutes of free time. I saw this recipe on Carrots ‘N’ Cake a while back so I thought I would try it out.

Ingredients:

1 frozen banana ( I learned the hard way to freeze them unpeeled)

I scoop vanilla protein powder

1/4 cup rolled oats

1 tblsp honey

1 tblsp ground flaxseed

2/3-1 cup Almond milk

Place all ingredients in a blender and pulse and blend. It tasted amazing and was a surprisingly filling way to start the morning with my boys!!
